Barbecue Prawns and Kiwi Kebabs with Couscous
Ingredients
. 500 gm king prawns
. 1½ tbsp sesame oil
. Zest of one lemon, finely grated
. 1 tbsp basil leaves, finely chopped
. 1 tsp soy sauce
. Salt and freshly ground black pepper
. 6 green kiwis, peeled and cut into chunks
. Couscous to serve (optional)
Method
Peel the prawns, leaving their tails on. In a medium-sized bowl, combine the sesame oil, lemon zest, basil, soy sauce and seasoning. Add the prawns. Cover and refrigerate for two hours.
Pre-heat the grill or barbecue. Thread prawns and kiwis onto skewers. Brush the kiwis with a little extra oil.
Place the kebabs on the grill or barbecue and cook for 1-2 minutes on each side, until the prawns are just cooked.
Serve hot on a bed of couscous folded through with toasted pine nuts, chopped parsley and diced chillies (optional).
