Serves: 4 Ingredients Sprouted mung ½ cup Honey 2 tbsp Lime juice 2 tbsp Salt and pepper to taste Mango, cubed 1 cup Watermelon, cubed 1 cup Rock melon, cubed 1 cup Toasted sunflower seeds 2 tbsp Parsley for garnish Lettuce leaves to serve METHOD Boil water with salt and cook sprouted mung for 5-7 minutes. Remove and cool. Melt honey in the microwave for 30 seconds. Add salt, pepper and lime juice; whisk well. Add all the fruits to a bowl, mix in the sprouts and dressing, and toss gently. Garnish with finely toasted sunflower seeds and parsley. Serve immediately on a bed of lettuce leaves.
