Moroccan rice pudding

Serves: 2
Ingredients
Rice, plain 1 cup
Water 2 cups
Lemon zest, fresh 10 ml
Cinnamon, fresh 1 stick
Milk, full cream 2-3 cups
Sugar to taste
Butter, room temperature 1 tbsp
Orange flower water to taste
Method
Rinse the rice in a bowl of water. Change the water repeatedly until the drained water is clear.
In a medium saucepan, add the rice, water, lemon zest and cinnamon stick.
Cook the mixture over medium heat, stirring from time to time to keep the rice from sticking to the pan.
When the water evaporates, add the milk to the saucepan. Cover the saucepan and continue stirring regularly.
Cook till the rice reaches a thick, soft consistency (add more milk if required).
Once done, add the sugar and butter to the mixture, topping off with a dash of orange flower water to taste.
