Ingredients
Sweet corn 2 cups
Spring onion, chopped ½ cup
Cucumber, chopped ½ cup
Red and green capsicum, chopped 1 cup
For the vinaigrette dressing:
Olive oil 2 tbsp
Vinegar 1 tsp
Mustard sauce ¼ tsp
Sugar or honey ½ tsp
Salt and pepper to taste
Parsley, finely chopped 1 tbsp
