Apple Jalebi

Serves: 4
Ingredients
. 1 cup plain flour
. 2 tbsp corn flour
. 1 tsp cardamom powder
. ½ tsp baking soda
. 2 tbsp sour yoghurt
. ½ cup milk
. 2 red apples
. Ghee or oil for frying
For sugar syrup:
. 1 ½ cups sugar
. 1 cup water
. 2 tbsp rose water
. 4-5 strands of saffron
. 4-5 green cardamom pods
. Silver foil & chopped nuts for garnish (optional)
Method
Mix flour with corn flour, cardamom powder and baking soda in a mixing bowl.
Add yoghurt and milk to make a pancake-like batter. Mix well to remove lumps and keep aside.
For the syrup: mix sugar and water in a pan and boil to make sugar syrup.
Add rose water, saffron strands and cardamom pods to infuse aroma in the syrup.
Once the sugar dissolves completely, simmer for 5-6 minutes and remove from heat.
Wash and wipe the apples and cut into thin roundels. Use cookie cutters to cut from the centre.
Heat the ghee or oil in a frying pan on medium high heat. Dip the apple slices in the batter and deep-fry till light brown.
Repeat the process to finish all and transfer the apple jalebis to the sugar syrup; soak for a minute before removing.
To serve, garnish with silver foil and chopped nuts.
