Arabic rice pudding

Ingredients
. ¾ cup short grain rice
. 8 cups whole milk
. 1 cup sugar
. ½ tsp mistika (Arabic gum), ground
. 1 tbsp sugar, finely ground
. ½ cup orange blossom water
. 1/3 cup pistachios, finely chopped
. Ground cinnamon, for garnish
Method
In a large saucepan, combine rice and water (as needed) and cook until tender (about 20 minutes). Drain the rice and add one cup of water.
Add milk and stir constantly; add sugar. Turn the heat down to low and simmer, stirring occasionally to prevent sticking.
Mix the ground mistika with the blossom water. Add this to the rice pudding and stir well. Remove from heat and allow it to sit for 5 minutes to thicken, preferably in a fridge.
Garnish with pistachios or ground cinnamon.
