Banana sago

Serves: 1
Ingredients 
Banana, fresh, sliced into
round shapes 150 gm
Sugar 50 gm
Sago 30 gm
Pandan leaves 30 gm
Coconut milk 50 ml
Pandan ice cream 50 gm
Method
In boiling water, add sago and boil for 5-10 minutes. Strain and set aside.
In a hot pan, melt half the sugar until it's caramelised.
Add in the banana to the caramelised sugar and cook until soft.
In a separate pot, boil the coconut milk with the rest of the sugar and add the sago.
Boil for 3 minutes. Set aside.
In a food processor, blend the pandan leaves and extract the juice. Mix the pandan leaves juice to the coconut milk mixture.
Pour enough coconut mixture into a cold bowl.
Top it up with the caramelised banana and pandan ice cream.
Top with the sauce and serve along with steamed jasmine rice.
