Ingredients
For the sauce:
Water 1 cup
Tomato ketchup 5 tbsp
Sugar to taste
Corn ?our 1½ tsp
Soya beans, brown, preserved,
pounded 1 tsp
Salt ¼ tsp
For the crab:
Garlic 8 cloves
Chilli, red, fresh 8 pc
Vegetable oil 3 tbsp
Crab, large, prepared
for cooking 1 pc
Egg 1 pc
Spring onion, julienned 2 pc
Lemon juice, freshly squeezed 1 tsp
Coriander leaves, cut into
2cm long pcs a small bunch
Method
Whisk all ingredients for the sauce together and set aside.
Pound or grind garlic and chilli to a rough paste.
Heat oil in a wok over high heat. Add the garlic and chilli paste and fry till fragrant.
Add the crab and stir-fry until the shells turn slightly red. Add the sauce.
Stir well, cover the wok and simmer till the shells turn bright red, indicating that the crab is cooked.
Break the egg into the sauce and mix well. Simmer for another 10 seconds.
Turn off the heat and stir in the spring onion and lemon juice.
Garnish with coriander leaves and serve.
