Ingredients
Soft shell crab..... 1500 gm
Bread crumbs. 200 gm
Eggs............. 5 pc
Flour.......... 200 gm
Olive oil.......... 150 ml
Corn oil.......... 100 ml
Mayonnaise........ 100 gm
White vinegar....... 50 gm
Sweet corn........ 1 tin
Salt........... 100 gm
Pepper......... 100 gm
Paprika powder....... 30 gm
Yoghurt......... 500 ml
Onion.......... 100 ml
Green asparagus...... 100 gm
Cumin seed........ 30 gm
Lemon juice........ 50 ml
Coriander......... 100 ml
Butter............ 200 gm
White asparagus........ 500 gm
Portobello mushroom.... 300 gm
Method
For the crab:
Cover the crab in the flour, eggs and breadcrumbs. Place in a deep fat fryer for about 3 minutes or till it turns a golden colour.
For the sweet corn dressing:
Using a blender, mix the sweet corn, olive oil, corn oil, mayonnaise, white vinegar, salt and pepper.
For the yogurt salsa:
Chop up and mix the remainder of the ingredients.
In medium hot pan sauté the Portobello mushroom. Serve as shown.
