Ingredients
. 1 tsp oil, for frying
. 7-8 cloves garlic, chopped
. 200 gm onions, finely chopped
. 4 green chillies, finely chopped
. 200 gm coriander leaves, chopped
. 30 gm mint leaves, chopped
. 350 gm firm, white fish fillet
. 80 ml coconut milk
. Salt and pepper, to taste
. 20 gm curry leaves
Method
Heat a teaspoon of oil in a pan. Add the garlic and sauté. Add chopped onions, green chillies, coriander and mint leaves, and cook until reduced.
Remove from the heat and allow to cool. Pour into a blender and blend to a smooth consistency.
Return the mix to the pan with a little oil. Add the fish along with the coconut milk and simmer for a few minutes. Check seasoning, garnish with curry leaves and serve.
