Ingredients
Sea bass 200 gm
Canola oil ½ tsp
Salt 30 gm
Lemon water 25 ml
Sauce Antiboise 30 gm
For the antiboise:
Onion, diced 50 gm
Beefsteak tomato, diced 50 gm
Caper 50 gm
Pine nuts 50 gm
Olive, black, sliced 50 gm
Basil, fresh 10 leaves
Garlic 2 clove
Salt a pinch
Pepper, fresh cracked a pinch
Olive oil 100 ml
Method
For the antiboise, mix all the ingredients together and heat up. Remove from fire just before it boils, and set aside.
Season the sea bass and grill. When done, place in a pie tin and add the lemon water.
Cook the sea bass in a 180°C pre-heated oven and cook for about 3-4 minutes.
Arrange sea bass on a plate and pour sauce on top. Serve.
