Ingredients
Mushroom, fresh, halved 2 cups
Onions, grated 2
Garlic .................................................5 cloves
Green chillies, finely chopped 2
Ginger 2"
Coriander seeds ..................................1 tbsp
Red Kashmiri chillies, dry 4
Tomatoes, finely chopped 2
Fenugreek leaves, dried 1tsp
Garam masala ½ tsp
Oil 3tbsp
Salt .........................................................to taste
Fresh cream 2tbsp Coriander leaves, chopped 1tbsp
Method
Combine the coriander seeds and red chillies, and dry roast on a hot tava (griddle) for 30 seconds. Remove and keep aside.
Blend in a mixer till it becomes a fine powder. Keep aside.
Heat the oil in a kadhai; add the onion and sauté on medium flame till translucent. Add the garlic and sauté for a few seconds.
Mix in prepared coriander-chilli powder and sauté on medium flame for a few seconds. Add green chilli and ginger and sauté again for a minute. Add the tomatoes and cook till the oil separates.
Throw in the mushroom, fenugreek leaves, garam masala and salt and cook on medium flame for another 5 minutes.
Stir in the cream and mix well.
Serve hot, garnished with coriander.
