Kaju matter makhana

Serves: 4
Ingredients
. 150 gm onion
. 150 gm tomato
. 5 gm green chillies
. 15 gm coriander leaves
. 30 gm ghee
. 5 gm cumin seeds
. 15 gm ginger paste
. 10 gm garlic paste
. 6 gm red chilli powder
. 3 gm turmeric powder
. 10 gm coriander powder
. 400 gm green peas
. 2 gm garam masala powder
. 30 ml cream
. 10 gm makhana
. 100 gm cashew nuts
Method
Chop the onion, tomato, green chilli and coriander separately and keep aside.
Heat the ghee and add cumin. When they crackle, add chopped onion and fry to a golden brown colour.
Add the ginger and garlic paste, along with the spices. Mix well and simmer for a minute.
Add chopped tomatoes, mix and cook until mashed or soft.
Add green peas, mix and stir for 5 minutes.
Add chopped green chillies and coriander, keeping a little aside for garnish.
Add garam masala and cream; stir well and cook for another 2 minutes.
Separately, in a pan, add a teaspoon of ghee, heat and toss the makhana until lightly roasted. Repeat the same for the cashew nuts.
Add toasted cashew nut to the curry and stir-cook for another minute.
Serve, adding roasted makhana on top, garnished with chopped coriander leaves.
