Shoppers heading to BurJuman’s Pavilion Gardens will be greeted by the full flavours and inviting aromas of one of India’s most popular culinary styles with the opening of Masala House.

Specialising in the Dum Pukht style of cooking – carried out over a very slow flame in sealed containers that retain all the juices and aromas of the ingredients – Masala House presents 16 different varieties of the aromatic ‘dum’ or ‘clay-pot’ biryanis. Specialties include the saffron-scented murgh zafrani biryani, gosht nalli biryani made with melt-in-your-mouth mutton marrow, dum biryanis made with fish and prawns for seafood lovers, vegetarian specials such as mushroom dum biryani and paneer tikka biryani and much more. The menu also features an extensive selection of kebabs and curries alongside popular Indian snacks, salads, soups and sides.

Headed by award-winning Executive Chef Pulam Singh, diners can look forward to classic Awadhi dishes from North India.

Chef Singh brings more than 20 years of culinary experience built in hotel kitchens in India, the Maldives and Dubai to his new role, and promises guests a truly authentic dining experience.

The dal shorba is a soup made from lentils, lemon and coriander with chickpeas dumplings. Chicken biryani is a mix of boneless chicken cooked in oriental spices with saffron basmati rice. Seafood lovers can choose from the Limbu jhingae which is king prawns marinated with lime leaves, yoghurt and toasted carom, or the kadhai jhingae which is a stir fry of prawns with tomato, coriander, pepper and fenugreek.
