Tuna Meat in brine......................240 gms
Anchovies fillet.........................60 gms
Snow peas...........................50 gms
Kenya beans..........................50 gms
Potatoes............................200 gms
Black olives (sliced).......................40 gms
Sun-dried tomatoes.......................60 cl
Mixed salad............................For four
Balsamic dressing.......................To taste
Salad Dressing
Shallots...............................200 gms
Garlic..............................100 gms
Olive oil..............................50 ml
Salt..........................90 gms
Bunch chives...................1 pc
Parsley....................30 g
Olive oil.....................600 ml
Basalmico vinegar...............600 ml
Method
Spring Roll Basket:
Arrange the spring roll sheet in a shallow bowl and cook in the oven until it turns to golden brown.
Boil the eggs and slice them into quarters.
Blanch the snow peas and string beans in boiling water and salt.
Potato: Dice the potato and boil in hot water until it becomes soft. Cool it down. Sautee it in onion and garlic.
Presentation: In the spring roll basket, add the mixed salad with the salad dressing and arrange all the remaining ingredients on top.
