Ingredients
For the pizza dough:
. 420 gm flour
. 215 ml water, room temperature
. 1.5 gm yeast, fresh
. 9 gm salt
. 11 ml olive oil
. Wild berries, as required
. Nutella, as required
Method
Mix the water, olive oil and yeast together.
Add flour to a dough mixer with a hook. Set the mixer in slow motion and slowly add the mixed water until the dough starts to thicken. Add salt (adding it earlier will kill the power of fresh yeast).
This procedure can also be done by hand.
Transfer the dough into a bowl and cover it with cling film for about 20 mins to let the dough rise.
Remove from the bowl and cut into five pieces of 180 gm each. Place them in a covered tray and allow to rise again for three more hours.
On a smooth tabletop, spread out 100 gm of flour and roll out four pieces of dough with a rolling pin till thin and perfectly round. (The extra dough can be stored for later use too.)
Use a fork to dock (or make small holes in) the dough all around. Remove extra flour from the dough. Place it on a tray and cook in a convection oven at 250°C for 13-16 mins.
When it starts to brown a little, remove from the oven, cut into half, and stuff with mixed wild berries and Nutella - as much you like. Close and serve still warm with icing sugar on top and a few berries around.
