Ingredients
Carrot, peeled, cubed, boiled 100 gm
Beans, washed, stringed, diced, boiled 100 gm
Cauliflower, washed, cut into florets, boiled 100 gm
Green peas, boiled 100 gm
Potato, boiled, peeled, mashed 150 gm
Refined oil 50 ml
Salt to taste
Tomato paste, diluted with little water 200 gm
Coriander, fresh, washed, chopped fine 50 gm
Pav bhaji masala 40 gm
Butter, softened 30 gm
Lemon juice 10 ml
Pao (Indian bread rolls) 8 pc
Method
Heat oil in a pan and add the boiled vegetables (except potato); sauté for 2-3 mins.
Add the tomato paste, salt and water; cook for 5-10 mins more till the veggies start to get mashed.
Add the pav bhaji masala and potatoes. Cook for 5 mins more.
When all the veggies are mashed and the mixture starts to leave the sides, add the butter and finish off with chopped coriander and lemon juice.
Check seasoning. Cut the pao buns into halves. Toast and serve with the bhaji.
