Potato, courgette and mature cheese frittata

Ingredients
Olive oil as needed
Potato, ?oury 300 gm
Courgette 150 gm
Chives 10 gm
Garlic 1 clove
Egg 8 pc
Milk 100 ml
Cream 100 ml
Table salt, fine, iodised to taste
Black pepper, coarsely ground to taste
Cheese, mature, grated 75 gm
Method
Pre-heat the oven to 175°C, ideally using the grill.
Slice the potato thinly. Cut the courgette into thin strips and chop the chives into short lengths. Chop the garlic ?nely.
Heat an ovenproof frying pan. Add enough olive oil to cover the bottom of the pan and fry the potato until golden brown (approx. 10 minutes).
Add the courgette, chives and garlic after approx. 5 minutes and leave to fry with the potato for another 5 minutes. Season with salt and pepper.
Whisk the eggs in a bowl. Add the milk, cream, salt and pepper and whisk again.
Pour the egg mixture over the potato and continue to cook over low heat without stirring until the egg mixture sets (approx. 8-12 minutes, depending on the size of the pan).
Sprinkle the grated cheese over the frittata and place the pan on the middle shelf of the oven.
Cook for approx. 15 minutes until golden brown. Serve.
