Serves: 4
Ingredients:
Prawn, 16/20, cleaned 300 gm
Potato flour 40 gm
Egg white 2 pc
Cooking oil 500 ml
Salt and pepper a pinch
For Wasabi mayonnaise:
Wasabi powder 15 gm
Mayonnaise 50 gm
Lemon juice 2 gm
Sugar 2 gm
Milk, condensed 15 gm
To garnish:
Strawberry 2 pc
Mango 50 gm
Black sesame 5 gm
Tobiko orange 20 gm
Method
Mix the mayonnaise with the wasabi powder, lemon juice, sugar and condensed milk.
Clean the prawns; season them with salt and pepper then marinate with egg white.
Toss the prawns with potato flour then deep fry; drain the oil and put the prawns aside.
Pour the Wasabi mayonnaise on top of the prawns.
To serve, place the prawns on the serving plate.
Garnish with pieces of strawberry, mango and Tobiko orange.
Sprinkle some black sesame and serve.
