Chilled Kiwi Cantaloupe Soup
Ingredients
• 2 cups cantaloupe, peeled, seeded and cut into 1-inch cubes
• ½ cup vanilla yoghurt, low-fat
• 2 tsp fresh mint, chopped
• 4 green kiwis, peeled, quartered and sliced
Method
Place cantaloupe, yoghurt and mint in a blender or food processor and process until smooth.
Cover and chill for about 1-2 hours before serving.
Stir in the kiwi and serve immediately.
