Ingredients
. Oil, as needed
. 200 gm potato, cubed
. 10 gm chilli paste
. 2 gm coriander leaves, chopped
. 5 gm garlic purée
. 2 gm salt
. 10 gm lemon juice
. 1 green chilli
. 1 sprig coriander
. 1 lemon wedge
. 0.1 gm sumac powder
Method
Fill a deep-fryer or saucepan one-third full with oil and heat over medium heat at 200°C (or until a cube of bread turns golden in 10 seconds).
Add potato cubes and fry, stirring, for 6 minutes or until golden and cooked through. Drain on paper towel.
Place chilli paste, coriander leaves and garlic purée in a bowl and stir to combine.
Heat 1 tbsp oil in a frying pan over medium heat.
Add the mixture and cook for 30 seconds until fragrant. Add the fried potatoes, salt and lemon juice, and toss to combine.
Transfer spicy potatoes to a bowl.
Garnish with one fresh green chili, a sprig of coriander leaves and a lemon wedge with sumac. Serve hot.
