Spinach potato croquettes

Ingredients
. 4 medium sized potatoes, boiled and mashed
. 2 cups blanched spinach, finely chopped
. 1 tbsp green chilli, finely chopped
. 1 tsp nutmeg powder
. 3 tbsp breadcrumbs
. Salt to taste
. 3 tbsp almonds, sliced
. 2 tbsp oil for frying
Method
Mix boiled potatoes with spinach, chilli, nutmeg powder, breadcrumbs and salt in a mixing bowl.
Divide the mixture into lime-sized balls and use your palms to work into the desired shape.
Coat each cutlet with the almond slices and arrange in an air fryer. Pour the oil equally over the cutlets.
Fry for 20-25 minutes or till done. Turn the cutlets over gently in between to ensure evenness.
Serve with mint chutney and salad, and blueberry juice on the side.
