Sumac chicken with oven roasted vegetables

Serves: 2
Ingredients
Zucchini, large, sliced into disks 1
Yellow zucchini, large, sliced into disks 1
Eggplant, large, sliced into batons 1
Sumac powder 1 tbsp
Olive oil 4 tbsp
Chicken breast fillets, trimmed 2
Baby spinach 75 gm
Salt and pepper........................To taste
Method
Place vegetables in a bowl, add 2 tablespoons olive oil, salt and pepper, and toss together. Place on a baking tray and roast for 35 minutes at 180°C or until tender.
Marinate chicken breasts with the sumac powder and 2 tablespoons olive oil, seal in a hot pan; place in oven for 20 minutes at 180°C. Serve with veggies.
