Ingredients
. 20 gm Chinese long beans, halved crosswise
. 1 tbsp palm sugar
. 1 clove garlic, finely chopped
. 2 Thai red chillies
. 2 tbsp fish sauce
. 2 tbsp lemon juice
. 3 lime leaves, shredded
. 125 gm raw papaya, grated
. 50 gm cherry tomatoes, halved
. 1 tbsp toasted peanuts, crushed
Method
Cook beans in a medium saucepan of boiling water for about 3 minutes.
Rinse under cold water.
In a mixing bowl, add palm sugar, garlic, and chillies. Crush to release the spice from the chillies.
Then add the fish sauce, lemon juice and lime leaves. Mix well.
Toss in the grated papaya, beans and cherry tomatoes.
Serve in a dish and sprinkle with toasted peanuts.
