Makes: 12-15 pieces
Ingredients
Corn (canned/frozen) 1 cup
Tofu, firm 150 gms
Peanuts, roasted 1/4 cup
Red Thai paste 1 tbsp
Red chilli, fresh 1-2 pcs
Lemon grass 2"
Lemon juice 1/2 pc
Soya sauce 1 tsp
Breadcrumbs, wholemeal 3 tbsp
Baking powder 1 tsp
Salt to taste
Method
Grind the corn, peanuts, chilli, lemon grass, red Thai paste and lemon juice in the mixer to a rough paste.
Add mashed tofu, soya sauce, salt and baking powder. Mix, make into round shapes and shallow-fry them. Serve with Thai chilli sauce.
