Ingredients
Tomato, medium, yellow, very ripe 6 pc
Shallot, roughly chopped 1 pc
Garlic, chopped 2 clove
Vegetable stock or water 1 L
Sea salt to taste
White pepper, cracked to taste
Basil oil a drizzle
Plum tomato, red, skinned, seeded, finely diced 1 pc
Method
Place the first four ingredients into a pot and bring to a boil.
Reduce heat and simmer for 45 minutes.
Remove from heat and puree in a blender.
Strain puree and season with salt and pepper.
Ladle into four bowls, drizzle with basil oil and sprinkle with diced tomato as garnish.
