With sweet potato mash as a side
Ingredients
4 beef meatballs
One big onion, sliced
375gm mushrooms, cleaned and sliced
2 tbsp tomato paste
1 tsp dried oregano
1 tsp salt
1 tsp cinnamon
1 tsp paprika
1/2 tsp pepper
1/2 to 3/4 cup water
Olive oil for frying
For mashed potatoes:
4 sweet potatoes
Salt to taste
1 tsp rosemary
2 garlic cloves, mashed
How to do it
Heat olive oil in a pan and brown the meatballs on all sides. Once done, remove and place on a plate.
In the same pan, add the onions and begin caramelising until golden.
Add the mushrooms and cook through. Don't let them dry out too much. You want the moisture that the mushrooms are releasing to add to the sauce/stock. Add the meatballs and mix together for two minutes on high heat.
Add water and tomato paste - allow it to simmer for 10 minutes while adding remaining spices and salt. You can also add fresh cream to the sauce.
For the mashed potatoes: Clean, chop and boil the sweet potatoes (You can opt to keep the skin on). Do not over boil or else it will lose the nutrients.
Once cooked through, begin to mash. You can add shredded cheese or cream to it. Add garlic and chopped rosemary. Plate the dish.
