Avocado Hummus
Serves: 1-2
Prep time: 20 mins
Ingredients
1 ripe avocado
400 gm can chickpeas, rinsed, drained
2 large garlic cloves
2 lemons, juiced
½ tsp pink sea salt (or any sea salt)
4 tbsp tahini sauce
2-3 tbsp cold water or ice cubes
Method
Blend all the ingredients in a food processor until smooth. Transfer the avocado hummus to a bowl. Serve with crispy pita bread or vegetable crudites.
Avocado Tahini Taco Boats
Serves: 1-2
Prep Time: 20 minutes
Ingredients
1 can organic chickpeas, drained, rinsed
1 ripe avocado, mashed
1/3 cup fresh coriander, finely chopped
1 cup cabbage, shredded
½ cup red peppers, chopped
½ cup cucumbers, chopped
1 medium carrot, shredded
5-6 corn tortillas
For the tahini dressing:
4 tbsp tahini
1 lemon, juiced
1 garlic, smashed
2-3 tbsp cold water
Pink salt and pepper to taste
Method
Whisk all ingredients for the dressing until smooth. Combine all ingredients for the taco boats (except the tortillas) in a bowl and lightly mash, until everything is mixed together. Scoop about 2 tbsp of the filling mixture into each tortilla, drizzle with tahini sauce and serve.
Smashed Avocado & Egg on Toast
Serves: 1-2
Prep Time: 10 minutes
Ingredients
1 ripe avocado
Black pepper to taste
Sea salt to taste
1 tbsp lemon juice
Dried chilli flakes, as required
1 egg (scrambled or fried)
1 radish, sliced
1 slice of whole grain seeded bread, toasted
Method
Smash the avocado into thick chunks, and season with salt, pepper and lemon juice.
Layer onto the toasted bread.
Cook the egg to your liking and add on top of the smashed avocado. Sprinkle with dried chilli flakes and sliced radish, and serve.
Avocado Green Goddess Smoothie Bowl
Serves: 1-2
Prep Time: 10 minutes
Ingredients
½ avocado
2 frozen bananas
1 ripe mango, chopped
1 cup spinach
250 ml almond milk or coconut milk
1 tbsp almond butter
1 tbsp raw honey
1 tbsp chia seeds
Method
Add all the ingredients into a blender and pulse to a thick smoothie consistency.
Divide between two bowls and top with your favourite fruits and nuts. Serve and enjoy!
Avocado Chocolate Mousse
Serves: 1-2
Prep Time: 10 minutes
Ingredients
1 whole avocado
2-3 tbsp cocoa powder
1 frozen banana
1 tbsp maple syrup
1 tsp maca powder
2/3 cup almond milk (or any
preferred milk)
Nuts, fruits or seeds, to garnish
Method
Add all the ingredients to a food processor or blender, and pulse until smooth.
Top with desired nuts, fruits or seeds and serve.
