Pizza Nachos
Serves: 2
Prep time: 10 mins
Bake time: 15 mins
Ingredients
1 tortilla
2 ½ tbsp olive oil
½ pizza sauce
½ cup mixed capsicum, chopped
½ cup mozzarella cheese, grated
2 tbsp jalapeno peppers
2 tsp dry oregano
1 tbsp red chilli flakes
4-5 leaves fresh basil
Method
Cut tortilla into triangles with a kitchen scissors. Toss in, or brush with, olive oil.
Heat oven at 190°C.
Arrange all the triangles in the baking tray and bake for 7-8 minutes or till crispy.
Spread nachos in the pie dish, and pour pizza sauce over them evenly.
Top with chopped capsicum, mozzarella, jalapeno pepper, oregano, chilli flakes and basil. Bake again till the cheese melts (about 8 minutes). Serve warm.
Pizza Wrap

Serves: 2
Prep time: 15 mins
Cook time: 15 mins
Ingredients
2 tbsp olive oil
½ cup mushroom, sliced
1 cup red bell pepper, sliced
1 cup yellow bell pepper, sliced
½ cup green bell pepper, sliced
½ cup orange bell pepper, sliced
7-8 cherry tomato, sliced
Salt to taste
1 tsp red chilli flakes
1 tsp oregano
2 ½ tbsp butter
2 readymade wraps
1 cup cheese
2 tbsp tomato paste, to serve
Method
Heat a pan and add olive oil and mushrooms. Sauté, then add all the bell peppers and tomatoes. Sauté for a minute and add seasoning. Remove from heat and keep aside.
Spread butter on both sides of the wraps and grill for 2 minutes on a heated frying pan.
Remove from the pan and spread the prepared mixture on one side of the wrap and add cheese. Gently roll it up and grill again.
Serve with chilli sauce or tomato ketchup.
Pull-Apart Pizza Loaf with Truffle Butter

Serves: 4-5
Prep time: 10 mins
Bake time: 30 mins
Ingredients
1 multigrain bread loaf
3 tbsp butter, melted
1 tsp truffle paste
½ cup pizza sauce
7-8 cherry tomatoes, sliced
¾ cup mozzarella cheese, grated
1 tsp oregano
5-6 fresh basil, roughly chopped
1 tsp red chilli flakes
2 tbsp olive oil
Method
Set oven at 180°C.
Use a sharp knife to cut the bread loaf diagonally, making diamond shapes without cutting into the base of the loaf. Transfer to a lined baking tray.
Mix melted butter with truffle paste in a bowl. Pour it into each wedge. Pour in the pizza sauce, sliced cherry tomatoes and cheese.
Sprinkle oregano, basil and chilli flakes on top. Drizzle with olive oil and cover it with foil.
Bake for 15 minutes, then remove from the oven, remove the foil and bake again for 10-12 minutes - or until the cheese has melted completely.
Remove and serve warm.
Pizza Wonton Cups

Serves:
Prep time: 15 mins
Cook time: 5-7 mins
Bake time: 20 mins
Ingredients
12 wonton wrapper sheets
Olive oil, to sauté
½ cup mushrooms
1 tsp black pepper
Salt to taste
1 cup tomato purée
Fresh basil
1 cup mixed bell peppers
1 cup mozzarella, shredded
1 tsp oregano
Method
Preheat the oven at 180°C.
Press the wonton wrappers into a muffin tray and spray with cooking spray. Bake for 6-7 minutes.
Heat olive oil and sauté mushroom with black pepper and salt. Stir in tomato purée, add basil and cook for 3 minutes.
Fill each wonton cup with 1 tbsp sauce and top with chopped bell peppers and mozzarella cheese.
Sprinkle oregano on top and bake for 8-10 minutes again or till cheese has melted. Serve immediately.
Pizza Bread

Serves: 4-6
Prep time: 2 hrs
Bake time: 35 mins
Ingredients
2 tbsp water
1 tbsp sugar
2 tsp yeast
3 cups all-purpose flour
2 tsp sea salt
2 tbsp olive oil
1 ½ cups warm water
2 tbsp Parmesan cheese
¼ cup olives
¼ cup sundried tomatoes
1 cup capsicum, chopped
½ cup corn, frozen, defrosted
2 cups shredded mozzarella
Fresh oregano, to sprinkle
Butter, for glazing
Method
Warm water with sugar and add yeast. Cover for 2 minutes till it rises. Mix flour, salt and olive oil in a stand mixer bowl. Add water to make dough. Add Parmesan cheese, olives, sundried tomatoes, capsicum and corn, and mix again.
Remove from the hook, cover with a lid and keep aside in a warm place for 45 minutes. Keep the dough in the fridge to chill for 20 minutes. Divide the dough into two parts.
Spread one half of the dough evenly in the bread tin and spread the cheese on top.
Overlap with the remaining dough and set aside, covered, for 30 minutes.
Drizzle olive oil and sprinkle fresh oregano on top.
Bake in a preheated oven at 220°C for 30-35 minutes. Remove and brush with butter. Cool on a wire rack.
Slice and serve warm with olive tapenade.
Strawberry Chocolate Pizza Tart

Serves: 8
Prep time: 20 mins
Cook time: 30 mins
Chill time: 2 hrs
Ingredients
2 ½ cup almond flour
½ cup gluten-free flour
3 tbsp butter
2 ½ tbsp maple syrup
For the toppings:
½ cup double cream
2 tbsp icing sugar
¾ cup readymade custard
½ tsp vanilla paste
2 tbsp cream cheese
20 strawberries
15 blueberries
5-6 blackberries
¼ cup chocolate, grated
Silver pearls, to garnish, optional
Method
Mix all the ingredients for the base in a mixing bowl with a spoon. Prepare a dough, adding 1 tbsp milk, if required, to make a smooth dough. Keep in the fridge to set for 10 minutes.
Preheat the oven at 180°C.
Grease a round baking dish, and spread the dough into a 4cm-thick circular shape inside it. Make some marks with a fork at the base, so that it does not rise during baking.
Bake for 14-15 minutes. Remove and cool completely.
For the topping, whip cream with icing sugar, then add readymade custard, vanilla paste and cream cheese. Spread evenly on top of the prepared base. Arrange strawberries, blueberries and blackberries as desired.
Top with grated chocolate and silver pearls.
Chill for 2 hours and serve cold.
