Masala oats with grilled cheese and cherry tomatoes
Prep time: 10 mins
Cook time: 25 mins
Serves: 2
Ingredients
2 tbsp oil
½ tbsp ginger, grated
½ tsp red chilli powder
1 tbsp yoghurt
1 tbsp tomato paste
1 cup cottage cheese
1 cup cherry tomatoes
Salt to taste
1 tbsp ghee
½ tsp mustard seeds
1 cup oats
2 tbsp carrot, grated
Water, as needed
2 tbsp fresh coriander
Mint leaves, to garnish
Method
Heat a pan and add oil, ginger, red chilli powder, yoghurt and tomato paste. Cook for 1 minute and add cottage cheese, cherry tomatoes and salt. Remove from heat and keep aside for 15 minutes.
Grease the grilled pan and spread marinated cottage cheese and tomatoes. Grill for 25 minutes.
Heat ghee in a pan and add mustard seeds; when they begin to pop, add oats and sauté. Add carrot and mix. Add water and salt and stir. Cook for 5-7 minutes till carrots are cooked.
Serve with grilled cottage cheese and cherry tomatoes, garnished with coriander and mint leaves.

Oats and walnut bread
Prep time: 1 hr 40 mins
Cook time: 35 mins
Serves: 4-6
Ingredients
2 cups oats
1 1/3 cups plain flour or quinoa flour
2 tbsp olive oil
1 tsp sugar
2 tsp yeast
1 cup warm water
1 ¼ tsp sea salt
¾ cup warm milk
1 tbsp olive oil, for greasing
¼ cup walnuts
2 tbsp extra oats, for dusting
Method
Add oats, flour and olive oil to a stand mixer bowl.
Add sugar and yeast in a cup with warm water. Cover and keep aside for 2 minutes, then add the yeast mixture, salt and milk to the prepared flour.
Combine all the ingredients in the stand mixture to form a smooth dough. Remove and set aside in a big bowl in a warm place for 1 hour and 30 minutes to rise.
Grease a silicon bread mould with olive oil and sprinkle with oats. Add chopped walnuts and transfer the dough into the greased bread mould.
Preheat oven at 180°C and bake the bread for 35-37 minutes.
Serve warm with butter.

Raspberry oatmeal crumbles
Prep time: 10 mins
Cook time: 40 mins
Serves: 6-8
Ingredients
2 cups raspberry, frozen
½ tsp lemon zest
2 tbsp brown sugar
2 tbsp castor sugar
1 apple, peeled and grated
100 gm butter
1/3 cup light brown sugar
2 tbsp honey
¾ cup all-purpose flour
1 cup oats, rolled
½ tsp vanilla paste
2 tbsp milk
Method
Grease an 8-inch silicon cake square or round mould and keep aside.
Heat a pan and add defrosted raspberries, lemon zest, brown sugar and castor sugar. Cook for 4-5 minutes. Keep aside and cool. Add grated apple and mix well.
Mix butter, light brown sugar and honey together with a spoon and combine with flour, oats and vanilla paste. Add milk and mix with a mixing spoon.
Pour into the prepared mould, retaining ¼ cup of the mixture. Layer with the raspberry mixture evenly and top with remaining oats mixture. Use a spatula to even it out.
Heat the oven at 180°C.
Bake for about 30-35 minutes. Remove and cool. Cut into squares and serve.

Rainbow oats bowl
Prep time: 10 mins
Cook time: 10 mins
Makes: 2
Ingredients
1 cup oats
2 cups water
½ tsp sea salt
2 tbsp milk
2 tsp honey
4 strawberries
6-8 cherries
8-10 red grapes
10-12 green grapes
½ red grapefruit
½ orange, peeled, sliced
2 kiwis, sliced
1 tbsp castor sugar
1 pinch of cinnamon powder
Method
Heat the pan and roast oats for 1 minute.
Add water and mix continuously till cooked.
Add salt and place in a serving bowl. Cool and add milk and honey.
Top with fruits and chill.
Powder the castor sugar in a blender and add a pinch of cinnamon powder.
Serve oats bowl, sprinkled with cinnamon sugar on top.

Quick oat cookies
Prep time: 5 mins
Cook time: 15 mins
Makes: 12
Ingredients
2 tbsp butter
2 tbsp milk
¼ cup light brown sugar
1 cup cooking rolled oats
2 tbsp whole-wheat flour
2 tbsp honey
1 tsp cinnamon powder
½ tsp vanilla paste
¼ tsp baking powder
2 tbsp dry coconut, freshly grated
2 tbsp sundried blueberries
2 tbsp dry orange pieces
Method
Mix butter, milk and sugar in a mixing bowl. Add the remaining ingredients and combine well with a spoon.
Preheat the oven at 180°C.
Divide the mixture into 12 equal parts and make lime-sized balls; arrange on a baking tray covered with baking paper and press them slightly with a fork.
Bake for 12-14 minutes. Cool completely. Serve.

Breakfast smoothie

Ingredients
1 cup mixed berries, frozen
1 banana, peeled and sliced
2 tbsp oats, dry, roasted slightly
Pinch of maca powder
½ tsp sea salt
½ tsp black pepper
1 cup strawberry yoghurt
2 tbsp honey
1 cup chilled water
5-6 fresh mint leaves
Method
Add all the ingredients to a blender (except the mint) and blend till smooth.
Serve immediately, garnished with mint leaves.
