American All-dressed
Prep time: 5 mins
Bake time: 5 mins
Serves: 2
Ingredients
1 pizza dough ball (220 gm)
70 gm tomato sauce
100 gm shredded mozzarella
60 gm beef salami
50 gm grilled red pepper, julienne
50 gm grilled green pepper, julienne
Pinch of fresh oregano
10 ml extra virgin olive oil, to spread on edges
Method
Set the oven temperature to 350°C.
Spread some flour on a clean surface and apply some more to the pizza dough ball. Use your fingertips to knead and flatten the dough. Keep the dough on the surface and roll, by hand or with a rolling pin, until 12 inches in size. (For a rectangular shape, just pull both sides till you achieve the desired form.)
Apply tomato sauce on the freshly flattened dough, leaving approximately 1 cm space along the edges.
Sprinkle half of the shredded mozzarella over the tomato sauce and add beef salami and grilled peppers on top. Sprinkle the remaining mozzarella cheese on top.
Using a pizza spatula, drop the ready-to-bake flatbread into the oven, and bake for 3-4 minutes until crispy. (Alternatively, you could bake at 270°C for 7-9 minutes.)
Once the flat bread has been baked, remove from the oven and sprinkle freshly chopped oregano. Spray the edges with extra virgin olive oil and serve.

Ingredients
60 gm eggplant, sliced
50 gm red pepper, julienne
50 gm green pepper, julienne
20 gm black olives, sliced
Salt and pepper to taste
Oregano sprinkles, as needed
10 ml extra virgin olive oil
20 gm feta cheese, crumbled
1 pizza dough ball (220 gm)
70 gm tomato sauce
90 gm mozzarella, shredded
Pinch of fresh oregano
Method
Season the sliced vegetables (eggplant, red and green peppers, black olives) with salt, pepper, oregano and olive oil. Grill all of the ingredients on a char broiler or in the oven, as preferred. Once grilled, add feta cheese and extra oregano (you can never have enough oregano sprinkles!)
Set the oven temperature to 350°C.

When done, remove from the oven and sprinkle over with fresh oregano. Spray extra virgin olive oil on the edges and serve.

Piri Piri Shrimps

Ingredients
1 pizza dough ball (220 gm)
50 gm tomato sauce
20 gm Piri Piri sauce
100 gm mozzarella, shredded
225 gm 16/20 shrimps, peeled
Pinch of fresh oregano
10 ml extra virgin olive oil
For the Piri Piri sauce:
160 gm red pepper, deseeded, diced
60 gm red onion, diced
25 gm red jalapeno pepper, deseeded, diced
15 gm garlic cloves
15 ml extra virgin olive oil
50 ml red vinegar
½ tbsp brown sugar
175 ml water
Salt and pepper to taste
Method
For the sauce, roast all the vegetables in a 240°C heated oven for 18-20 minutes or until well roasted. Heat a hard bottom pan and add olive oil; then, add all the roasted vegetables and sauté for 2 minutes. Add red vinegar and brown sugar and simmer for 2 minutes. Then add water and simmer until the liquid reduces by half under medium heat. Use a mixer and blend the liquid until creamy. Add salt and pepper to taste.
Marinate the de-shelled, medium-sized shrimps with the Piri Piri sauce.
Pan sear the shrimps in the sauce to a golden, crisp colour and set aside.
Set the oven temperature to 350°C. Prepare the flat bread dough (as instructed in previous recipes) and roll out until 12 inches in size.
Apply Piri Piri sauce mixed with tomato sauce on the dough, without touching the edges. Sprinkle half the shredded mozzarella over the tomato sauce and add the pan-seared shrimps. Sprinkle remaining mozzarella cheese on top.
Place the flat bread in the oven, and bake until crispy (about 3-4 minutes). Remove from the oven, sprinkle fresh oregano, spray extra virgin olive on the edges and serve.

Beef Bacon and Mozzarella
Prep time: 10 mins
Bake time: 5 mins
Serves: 2
Ingredients
1 pizza dough ball (220 gm)
90 gm tomato sauce
60 gm mozzarella, shredded
120 gm semi-cooked beef bacon
Pinch of fresh oregano
10 ml + 2 tsp extra virgin olive oil
15 gm arugula
4 cherry tomatoes, halved
1 tsp lemon juice
Method
Set the oven temperature to 350°C.
Prepare the flat bread dough (refer previous recipes). Apply tomato sauce on top, without touching edges, then sprinkle half the shredded mozzarella over the sauce. Add beef bacon on top, followed by the rest of the mozzarella cheese.
Bake the flat bread for 3-4 minutes or until crispy.
Remove from the oven and sprinkle fresh oregano on top. Spray the edges with extra virgin olive oil.
Toss the arugula and cherry tomatoes with lemon juice and 2 tsp olive oil and place over the flat bread.
Serve.

Folded Flat Bread with Maple-Buttered Banana and Strawberry

Ingredients
15 gm sugar
50 gm cream cheese
1 tsp lemon zest
2 bananas, ripened, sliced
90 gm strawberry
15 gm butter
30 ml maple syrup
1 pizza dough ball (220 gm)
80 gm cheese curd, crumbled
10 gm icing sugar
10 gm almond flakes
Method
Set the oven temperature to 350°C.
In a bowl, mix sugar and cream cheese and whisk until the sugar has dissolved. Add lemon zest and refrigerate.
In a medium, heated, nonstick sauté pan, toss both the fruits with butter and maple syrup for 2 minutes. Remove from the heat and allow to cool for a few minutes.
Prepare the dough and roll it out, as in previous recipes.
Sprinkle cheese over half the dough, while leaving 1 cm space at the edges. Add the fruit mix on top of the cheese, then fold the other half of the flat bread over to cover the fruit mix; close/seal the edges using your fingertips.
Bake in an oven for 3-4 minutes until crispy. Remove from the oven, and sprinkle over with icing sugar and almond flakes.
Serve with a dollop of prepared lemon cream on top.

Glazed Strawberry and Cheese Curd
Prep time: 5 mins
Bake time: 5 mins
Serves: 2
Ingredients
110 gm strawberry, quartered
Powdered sugar, as needed
1 pizza dough ball (220 gm)
90 gm cheese curds or mozzarella, shredded
Icing sugar, to sprinkle
Method
On a medium heated pan, add sugar powder and strawberry wedges.
Mix them together for 2 minutes until well combined and crispy. Set aside.
Set the oven temperature to 350°C.
Prepare the dough and roll it out to the desired shape, as per previous recipes.
Sprinkle half the shredded cheese curds or mozzarella over the dough, leaving 1 cm space edges. Follow with glazed strawberries, then sprinkle remaining mozzarella cheese on top.
Bake the flat bread for 3-4 minutes or until crispy.
Once done, remove from the oven and sprinkle over with icing sugar powder; cut into eight slices and serve.
