MIDDLE-EASTERN BURGER
Prep time: 15 mins
Cook time: 30 mins
Makes: 4 patties

Ingredients
For the falafel patty:
1 tin chickpeas, rinsed
½ medium white onion, chopped
3 cloves of garlic
Small handful fresh parsley
½ small handful fresh coriander
2 tbsp wholemeal flour
2 tsp ground cumin
1 tsp ground coriander
¼ tsp cayenne pepper
Salt and pepper to taste

For the construction:
Burger bun, spinach, caramelised onions, roasted red capsicum, hummus, cucumber ribbons, purple microgreens

Method
Preheat the oven 180°C.
Place all the ingredients into a food processor and blend until the texture is a bit course and not too fine.
Shape into four patties and place them onto a baking tray with baking paper.
Spray the patties with oil and bake them for 15 minutes on each side.
To construct, start with a burger bun, topped with spinach leaves, caramelised onions, roasted red capsicum, the patty, hummus, cucumber ribbons and purple microgreens.

PULLED-JACKFRUIT SLIDERS
Prep time:  20 mins
Cook time: 1 hr 40 mins
Serves: 4

Ingredients
For the pulled jackfruit:
4 cups green (unripe) jackfruit,
cut into chunks (or tinned
"green" jackfruit)
1 tbsp coconut oil
1 red onion, sliced thinly
1 star anise
3 garlic cloves, chopped
1 tbsp ground paprika
1 tbsp ground smoked paprika
1 tsp chilli powder
1 tsp ground cumin
½ carrot, julienned
3 medium tomatoes, deseeded, chopped
1 cup vegetable stock
Salt and pepper

For the construction:
Burger bun, smoked hickory BBQ sauce, purple cabbage, cucumber, carrot, coriander, sliced jalapeno

Method
Boil the jackfruit with some salt for 30 minutes and rinse it. Set aside.
Heat the coconut oil in a medium saucepan over medium heat.
Add onion, star anise and garlic. Sauté until fragrant and the onion turns slightly brown. Then add paprika, smoked paprika, chilli powder and cumin. Sauté for 2 more minutes.
Add the carrots, tomatoes, jackfruit, vegetable stock, salt and pepper. Simmer for an hour over low heat, stirring occasionally.
The jackfruit should start to break into fibres - you can assist this with a fork.
To construct, start with a burger bun, top with pulled jackfruit, BBQ sauce, purple cabbage, cucumber, carrot, coriander and sliced jalapeno, and finish with a burger bun.

THE BEETROOT BURGER
Prep time:  45 mins
Cook time: 30 mins
Makes: 8

Ingredients
For the beetroot and wild rice patty:
2 medium beetroot, roasted, chopped
225 gm tinned kidney beans, rinsed, mashed
½ cup wild rice, cooked
½ cup mix quinoa, cooked
2 flax eggs (2 tbsp ground flax seed
+ 6 tbsp water)
½ red onion, diced
2 cloves garlic, finely chopped
1 tsp smoked paprika powder
1 tbsp coconut oil
1 tbsp lemon juice
2 tbsp parsley, chopped
Salt and pepper to taste

For the construction:
Black bun, rocket, guacamole, carrot, yellow capsicum, coriander, radish, purple cabbage

Method
Preheat the oven 180°C.
To make a flax "egg" to help bind the ingredients together, mix ground flax seed with water in a small bowl. Let the mixture soak for 5-10 minutes.
Place the roasted beetroot into a food processor and blend into a coarse texture. Then, add it to a large bowl, together with the remaining ingredients; mix well to combine together.
Shape into eight patties and place onto a baking tray with baking paper.
Spray the patty with a little oil, and bake for 15 minutes on each side.
To construct, start with a black bun, topped with guacamole, rocket leaves, the patty, sliced carrots, julien ned yellow capsicum, coriander, radish and purple cabbage. Top with another black bun, and serve.

SPICED CAULIFLOWER BURGER
Prep time:  15 mins
Cook time: 15 mins
Makes: 4

Ingredients
For the cauliflower steaks:
2 small heads of cauliflower
1 tsp ginger, grated
½ tsp garlic, grated
½ tsp turmeric powder
½ tsp cumin powder
¼ tsp coriander powder
½ tsp sweet paprika powder
Salt and pepper to taste
1 tbsp olive oil

For the construction:
Naan or pita bread, tamarind chutney, mint chutney, tomato, roasted eggplant, edible flowers

Method
Preheat the oven 180°C.
Remove the leaves and trim the stems of the cauliflowers. Slice them into ¾-inch thick 'steaks'. Season with salt and pepper.
Heat a grill pan and spray it with some oil, then sear the cauliflower steaks until golden brown on each side (about 2 minutes each).
Transfer the cauliflower steaks onto a baking tray with baking paper.
In a small bowl, add all the remaining ingredients and mix well together.
Brush the cauliflower steaks with the spice mixture and bake for 5-8 minutes on each side until tender.
To construct, place some tamarind chutney on a naan or pita bread, followed by tomato, a cauliflower steak, roasted eggplant, and a second cauliflower steak.
Top with mint chutney and edible flowers. Serve.

AVOCADO BURGER
Prep time: 30 mins
Cook time: 30 mins
Makes: 8 patties

Ingredients
For the sweet potato and black
bean patty:
1 large sweet potato
½ cup mixed quinoa, cooked
½ cup tinned black beans
1 carrot, grated
½ red onion, diced
2 cloves of garlic, finely chopped
1 tsp cumin powder
2 tsp smoked paprika powder
½ tsp cayenne powder
2 flax eggs (2 tbsp ground flax seed
+ 6 tbsp water)
2 tbsp coriander, chopped
1 tbsp coconut oil
Salt and pepper to taste

For the construction:
Avocado, lettuce, beetroot hummus, alfalfa sprouts, spiralised carrots, tomato

Method
Preheat the oven to 180°C.
Cut the sweet potato into cubes and bake them for 45 minutes.
To make a flax "egg" (to help bind ingredients together), mix ground flax seed with water in a small bowl. Let the mixture soak for 5-10 minutes.
Remove the sweet potato from the oven and add to a large mixing bowl.  
Drain and rinse the black beans. Add them to the mixing bowl.
Mash together with the sweet potato, and add the remaining ingredients;
mix well.
Shape the mixture into 8 patties and place them on baking paper on a baking tray. Spray the patty with a small amount of oil spray.
Bake for 15 minutes on each side.
To serve, place lettuce on half an avocado 'bun', topped with beetroot hummus, the patty, alfalfa sprouts, tomato, spiralised carrots and finally the other avocado 'bun'.
