Who do you admire most in the culinary world, and why?
The late Anthony Bourdain. His raw approach to food, culture and fusion inspires my kitchen ethos. As one of the first 'rock-and-roll' chefs, Bourdain has brought incomparable glory to the profession of cheffing.
Your favourite culinary destination, and why?
There's nothing a modern chef loves more than a cultural melting pot. It's a bottomless pool of inspiration! So, Dubai takes the cake, in this case. I'm in awe of the range of authentic cuisines and budding concepts that are available here.
How often do you eat out? What's your favourite place around town?
When my schedule gives me the time to eat out, I'm hitting up a cafeteria or street food spot. It's the best way to experience what a city "tastes" like.
If you could cook for a high-profile personality, who would it be and what would you serve them?
Give me a time machine and I'd travel into the past to host Anthony Bourdain for dinner. On the menu: a boerewors sausage roll with caramelised onions.
You're asked to invent an unusual dish - what would it be?
I love unleashing the power of protein mixed with something sweet. I'm also a die-hard fan of fusion. When tasked with this at the restaurant, I cooked up what I consider a signature dish. Yemeni-inspired slow braised beef with quinoa madrouba. A little classic, a little contemporary, majorly comforting.
One ingredient/dish you can't stand, and why.
I'm glad to be the person at a restaurant who says "no allergies - thanks" when asked if I have any dietary restrictions. As a fan of Anthony Bourdain, I have trained my tongue to try everything at least once!
After cooking all day, do you cook for yourself at home too?
I don't cook at home. After rushing around a restaurant kitchen, grazing and sampling dishes all day, there's not much more I can fit in after work.
If you could choose a last meal, what would it be?
It would - without a doubt - be my mother's mac and cheese. Nothing would be a better send-off than a forkful of that flawless dish.
Where can we find you, when not in the kitchen?
When I'm not working up a sweat in the kitchen, I'm breaking a sweat at the boxing gym. And if you don't find me there, I'm probably at a tattoo parlour.
